			<content:encoded><![CDATA[<p>Thursday is taco night at our house. We have a lot going on that day and tacos are easy and more importantly fast to make and everyone seems to like them. Unfortunately we all started to get a little tired of them, so I decided to try this <a href="http://www.hillbillyhousewife.com/chickpeatacos.html">chick pea tacos recipe</a> instead. They are very yummy, but I have to warn you… if you don’t use enough avocado as “glue”, the chick peas start to roll all over the place, making it a bit of a challenge to eat them.<span id="more-26"></span></p>
<p>We had a lot of fun and I’m glad I found another <a href="http://www.hillbillyhousewife.com/beanrecipes.htm">bean recipe</a> that my family enjoys. Ok, technically they are peas, not beans, but they are in the legume family, and are full of protein and fiber. That counts in my book and overall this is a very healthy meal. I have to confess; I didn’t have organic sour cream at home and didn’t feel like going to the store, so we just topped them with a little plain yogurt. I’m sure they’d be even better and more authentic with sour cream though.</p>
